That's A Spicy Meatball!!!

So for the first time sense before my mission I decided to make my Grandma's Pasta sauce and meatballs. When I told Jake I was daring such an excursion he was less than thrilled, pasta isn't as appealing for him as it is for me and my Italian roots. However, when I mentioned that meatballs were included he was thrilled.....meat is always a good choice. It took me four hours to get the consistency right and to remember all the ingredients, but with the help of my sister Julianna and my Mom, it all turned out well. Tomorrow will be our big spaghetti night with meatballs. I feel so proud of myself that I dare quote Martha Stewart in agreeing, "It's a good thing"!

Christmas is over

So Christmas is finally over, and I'm glad. I go back to work on Jan 5th and Jake and I both start school again on the 12th. I'm only taking 12 credits this semester to see if that will lower my stress levels this round. Classes seem to be getting harder the more I'm in school. I look back at my days at BYUI and feel like my classes there were a breeze compared to what I'm up against now. But things are going well for us right now. I won't have classes on Mondays, Wednesdays, or Fridays, which will give me ample time to do things around the house and study before Jake gets home at night. But I'm still working with my 4th, 5th, and 6th, graders. I would love to say that it is my dream job, but falls quite short from such an aspiration.
During the break we've had lots of time to spend with each other and get some stuff done around the house. Also, I made my first tea ring (a coffee cake like dessert) and it didn't totally suck......gotta keep the Giometta pride alive.
This Christmas we gotta a lot of really cool gifts.....Jake got me a dress and a jewelry box and I got him a nice coat to wear, but not to destroy at work. From the family we got some nice mementos and a wedding album and Jake got a Carhart coat from my brother the plumber.
Other than that we are anticipating our visit with Ben and Jess this coming week!

I had long hair

Recently, I got my hair butchered. And this is what it used to look like. Maybe it was not the greatest haircut in the world, but I had hair. Now, I might as well go join the marines. Peace out, Rachel, I am gonna go be all that I can be!!

We Are LDS

Jacob Henry Brooks and I were married August 12, 2008 in the Bountiful, Utah Temple. Where we were sealed for time and eternity there. We met in the 29th University Singles ward at the University of Utah Institute. At first we were just friends, because we were both dating other people at the time, but it didn't take us long to eventually hook up and two months later, shockingly, we were engaged! We waited until August to get married to give ample time to learn more about eachother, a whole 3 months. Jacob's family is from North Bend, Oregon and he has siblings spread out all over the upper North West of the United States, including Alaska. My family is originally from Rockford, Illinois a huge town about an hour West of Chicago. While I was out of the country for awhile my parents moved to Salt Lake City to start a new and different life. When I returned in December of 2007 I joined them here. Jacob and I have both lived in many other places, together which include: Oregon, Alaska, Salt Lake City, Arizona, Montana, Chicago, Las Vegas and Idaho.
Jacob served his mission in the Salt lake City South Mission and I served in the Honduras, San Pedro Sula mission. As hard as the missions were, they were nothing alike, and sometimes we argue over what method was more correct, but either way we were both serving the lord with good intention. However, I can now interpret all the awful things Jakes spanish co- workers way to him without his understanding, but he probably deserved it at the time.
We are both in school, I go to the University of Utah working on my Undergrad majoring in Speech Language Pathology, and minoring in Human Development. I hope to finish sometime in teh beginning of 2010 and if time permits it continue on with getting my Masters there. Jacob is studying at Salt Lake Community College working on getting all of his Generals done and preparing for a transfer to a University. As of right now we aren't to sure as to where, but Jacob has shown a strong interst in Financial Advising.
